Analysis method:In This study butter sample 30 from production factury5 in city Neyshabur It was randomaly sampled from the market level and Microbial and chemical analyzes were preformed on them.Also Mathematical modeling was used to prove the most important Listeria contamination in the above buuters. Finding :The results of the mathematical model of the dandrogram showed that the most important infection among the butter produced in the city is Listeria innocua infection .Result of statistical test showed that some chemical properties samples butter,was not significant difference between Listerian contamination butter . The comparison of means was also shown ,yeast contamination can affect Listeria infection .But coliform contamination does not affect Listeria infection . Conclusion :Listeria innocua infection ,is the most important contamination amomg butter produced in Neyshabur city .There is no threat to consumer health and safety.Not counting Observing Health standards can dramatically reduce microbial contamination. زمینه :کره یکی از قدیمی ترین محصولات لبنی است که در تغذیه انسان نقش مهمی دارد فساد کره بر اثر میکرو اورگانیسم هایی است که قادر به رشد در حرارت های پایین هستند یکی از مهمترین آلودگی ها در کره آلودگی لیستریایی خصوصا لیستریا مونوسیتوژنز است که باعث ایجاد بیماریهای نادر و شدید مانند لیستیوزیس می گردد. روش بررسی :در این مطالعه 30 نمونه کره از 5 کارخانه تولیدی در شهر نیشابور بطور تصادفی از سطح بازار نمونه برداری و آنالیزهای میکروبی و شیمیایی بر روی آنها انجام گرفت همچنین از مدل سازی ریاضی جهت اثبات مهمترین آلودگی لیستریایی در کره های فوق استفاده گردید. یافنه ها :نتایج مدل ریاضی دندروگرام نشان داد که مهمترین آلودگی در بین کره های تولید شده در این شهر آلودگی لیستریا اینوکوآ میباشد .نتایج آزمون آماری برخی شاخص های شیمیایی کره ، اختلاف معنی داری را بین میزان آلودگی لیستریایی و کره نشان نداد .همچنین مقایسه میانگین ها نشان داد که آلودگی مخمر میتواند بر آلودگی لیستریایی موثر باشد اما آلودگی کلی فرم موثربر الودگی لیستریایی نیست. نتیجه گیری :آلودگی لیستریا اینوکوآ مهمترین آلودگی در بین کره های تولید شده در شهر نیشابور است که تهدیدی برای سلامت و ایمنی مصرف کننده بشمار نمی آید با رعایت موازین بهداشتی میتوان بطور چشمگیری باعث کاهش آلودگی های میکروبی گردید. /downloadfilepdf/134513
